Traditional Reubens call for Russian dressing. Many restaurants serve it with Thousand Island as they already have it on hand, but it is a pale shadow of the amazing symphony of flavors in a zesty Russian!
This dressing is a snap to put together and features a sharp kick of horseradish, chili, and garlic blended in a creamy base. Whether you're serving Reuben sandwiches or just want to liven up your Sunday roast, this dressing is perfect. It also goes great on salads, though you may want to thin it out a little with extra lemon juice and/ or milk or cream,

Ingredients:

1/2 cup sour cream or strained & thickened yogurt
1/4 cup chili garlic paste (Sriracha brand is my fave!)
juice of 1 lemon
2 T prepared horseradish
2 T finely minced fresh onion
1 T minced garlic (or 4-5 fresh cloves, minced)
1/2 tsp paprika
1 tsp worcestershire sauce

Directions:
Mix all ingredients. The dressing will be rather thick. For salads you may want to thin it with additional lemon juice or whey, or a splash of milk.
