The Perfect Steak

​Skip the grill!  Grab a well-seasoned cast iron skillet and a bottle of avocado oil for steaks that are the envy of any steak house!

  • Start with your favorite Eden Pure Beef steaks.  Salt well and thaw completely in the refrigerator, then bring to room temperature before searing. (Not sure it's warmed through?  place your steak in a plastic bag and immerse in very warm water for about 20 minutes to eliminate  problems with a chilled center)

  • Heat 1 - 2 T of avocado oil in your cast iron skillet.  Set your stove to "HIGH" and get your skillet good and hot - the avocado oil should be just beginning to smoke!

  • Blot your steak to dry the surface.  Moisture causes steaming which will interfere with that crisp, caramelized surface that separates the good steaks from the GREAT ones!

  • Sear your steak for 1 - 2  minutes on each side 

  • Use the HAND TEST to check for done-ness

  • Thinner steaks are likely done at this point.  Thicker steaks should be covered and placed in an oven heated to 350*F for 5 - 8 minutes to finish bringing the center to the desired temperature.

  • Always transfer your steak to a plate to rest in a warm place for 5 minutes before cutting into them so they can reabsorb the juices.

  • If you need something to do for 5 minutes to keep you from prematurely cutting your steak, render a thick pat of butter in your skillet , along with a couple of cloves of freshly crushed garlic and a sprig of your favorite herbs (I love rosemary and basil!)  Drizzle this over your steak just before serving

  • Enjoy!
